Dark Chocolate Coconut Bars
A nostalgic coconut treat, reimagined with deeper cacao, richer texture and a little more grown-up indulgence.
When the dark chocolate Bounty disappeared, it left a coconut-shaped gap for those of us who prefer something less sweet and far more satisfying. So this is our 80Noir version: creamy coconut wrapped in deep dark chocolate, naturally gluten-free, dairy-free, and made for slow, satisfying bites.
Ingredients
A short, beautiful list of real ingredients - coconut, cacao, a little maple and a touch of sea salt.
For the Coconut Centre
- 160g desiccated coconut
- 100g full-fat coconut milk, solid part only
- 3 tbsp full-fat coconut milk, liquid part
- 4 tbsp maple syrup
- ¼ tsp sea salt
For the Dark Chocolate Shell
- 150g 80Noir Ultra dark chocolate, melted
- Use 87.5% for a rich, elegant coating
- Use 100% for a deeper, more intense finish
Method
Simple, tactile and wonderfully satisfying, especially if you make the mini versions.
- In a bowl, combine the desiccated coconut, coconut milk, maple syrup and sea salt until the mixture becomes sticky and cohesive. It may still look slightly textured that is exactly what you want.
- Shape the mixture into bars using your hands, or press into a mini silicone mould. A financier tray works beautifully for bite-sized pieces.
- Freeze for 1–2 hours, until firm enough to coat.
- Melt the 80Noir Ultra dark chocolate gently, then dip each coconut bar until fully coated.
- Place onto a lined tray and refrigerate until the chocolate has set.
