I never set out to make another hot chocolate.
I wanted to understand why the one I wanted didn't seem to exist.
The beginning
“I loved chocolate. I cared about wellbeing. And I could never understand why the two were so often treated as opposites.”
Before 80Noir
The idea didn't begin in a chocolate factory.
My working life began far away from cacao.
I spent more than two decades working in financial services, project delivery and change — environments built around solving problems, questioning systems and working out how something could be done differently.
Alongside that came another world: fitness, wellbeing, writing and an increasingly strong interest in how the everyday choices we make affect how we feel and perform.
Chocolate was always there too.
The question
Why did hot chocolate have to mean so much sugar?
I wasn't looking for chocolate that pretended not to be chocolate.
I wanted something rich, dark and genuinely indulgent — but with cacao doing the work rather than sweetness dominating everything in the cup.
The obvious question became: what happens if we start with the chocolate, rather than the sugar?
Building 80Noir
The darker the chocolate became, the more interesting the idea became.
What started as a search for a better hot chocolate gradually became something much bigger.
I began exploring higher cacao percentages, different origins, flavour profiles and serving styles.
72%. 87.5%. 100%.
Different chocolates for different palates, different moments and, increasingly, different rituals.
Rather than asking people to give chocolate up, 80Noir Ultra® became about giving them a different way to choose it.
Then people started using it differently
The customers changed the questions.
The more people brought 80Noir into their lives, the more interesting the stories became.
Morning
Some began reaching for dark chocolate instead of their usual morning drink.
Everyday
Others wanted something genuinely indulgent that still fitted the way they wanted to eat and live.
Movement
Athletes and active customers began exploring where cacao might sit around training and performance.
Slow down
Chocolate also found a place in quieter, slower rituals at the other end of the day.
Listening became part of the product
I stopped asking only, “Do people like it?”
I became much more interested in how people were using it, why they were choosing it, and what they noticed when they did.
Those conversations eventually led to our own exploratory testing, including a five-day morning coffee-swap pilot with habitual coffee drinkers.
It wasn't clinical proof. It was something more useful at that stage: a reason to ask better questions.
Curiosity became R&D
Chocolate became a question, not just a product.
That curiosity now runs through 80Noir Ultra®.
We're exploring formulation, cacao percentage, serving size, texture, performance, rituals and new ways of preparing real chocolate.
Some ideas work. Some don't. Some open completely new directions.
I think that's what makes the work exciting.

What's next
The ambition was never simply to sell more hot chocolate.
The bigger idea is to change where chocolate belongs.
In daily rituals. In performance. In wellness. In beautiful hotels. In new formats. And in places we haven't reached yet.

We're still only at the beginning.
80Noir Ultra® began with one very simple frustration.
Today it has become a much bigger exploration of chocolate, ritual, wellness, performance, research and what might come next.
And there are still far more questions I want to answer.
