Cacao contains a remarkable collection of naturally occurring compounds. Some are well studied. Some are promising. Some are still being understood. Here, we separate the science from the story.

Science without the spin

Cacao is fascinating enough without asking it to perform miracles.

Chocolate is surrounded by extraordinary claims. Some have good evidence behind them. Others travel considerably faster than the science.

Our approach is simpler: understand what researchers have actually tested, where the evidence is strongest, where it is mixed, and where unanswered questions remain.

Cacao beans and dark chocolate

Inside cacao

One ingredient. Many compounds.

Flavanols

Plant-derived compounds including epicatechin and catechin. They are among the most extensively studied components of cacao, particularly in relation to vascular function.

Theobromine

A naturally occurring methylxanthine closely related to caffeine. Cocoa generally contains considerably more theobromine than caffeine.

Caffeine

Present naturally in cacao in smaller quantities. The exact amount varies with cacao type, processing and serving size.

Minerals + macronutrients

Cacao also contains fibre, fat, protein and naturally occurring minerals. The nutritional profile changes considerably depending on how chocolate is formulated.

Where the research is

Four areas worth paying attention to.

Blood flow + vascular function

This is one of the more established areas of cocoa-flavanol research. Human studies have repeatedly investigated effects on endothelial function and blood-vessel responsiveness.

Cocoa flavanols are also the subject of an authorised European health claim relating to maintenance of blood-vessel elasticity and normal blood flow, subject to specific intake and product conditions.

Cognition + mental performance

Cocoa flavanols have been studied in relation to memory, executive function, attention and performance during sustained mental effort.

Several trials and reviews have reported encouraging findings, particularly for aspects of memory and executive function. But the evidence is not uniform: larger and longer studies have also found no overall cognitive benefit.

Exercise + performance

Researchers have explored cacao flavanols in relation to circulation, metabolism, oxidative stress, recovery and exercise performance.

Some physiological effects look interesting. However, systematic reviews have not shown a consistent direct performance-enhancing effect in trained athletes.

Theobromine, caffeine + how cacao feels

Theobromine and caffeine belong to the same methylxanthine family, but they do not behave identically.

Research suggests caffeine has clearer acute effects on alertness, while the effects of theobromine on mood and cognitive performance are less consistent at nutritionally relevant doses.

That makes cacao biologically interesting — but it does not justify describing theobromine as simply “caffeine without the crash.”

More nuanced than the marketing

One particularly important distinction

There is an authorised European health claim for cocoa flavanols and normal blood flow.

The authorised wording relates specifically to cocoa flavanols helping maintain the elasticity of blood vessels, which contributes to normal blood flow.

The beneficial effect is associated with a daily intake of 200 mg cocoa flavanols, and strict conditions govern when that claim may be made for a food.

This does not mean that every dark chocolate automatically provides the qualifying amount.

What the science doesn't say

Interesting isn't the same as proven.

Darker doesn't automatically mean “clinically effective.”

Cacao percentage alone doesn't tell us exactly how many flavanols survived fermentation, roasting, processing and formulation.

One study doesn't define everybody.

Dose, age, diet, health status, formulation and study design can all affect the outcome.

A mechanism isn't a guaranteed benefit.

Showing that a compound can influence a biological pathway is not the same as proving that a finished chocolate product produces a meaningful real-world outcome.

Why this matters to us

We don't want to borrow science. We want to understand it.

The wider cacao literature helps us decide which questions are worth investigating inside 80Noir Ultra®.

It informs how we think about cacao percentage, serving size, timing, formulation, performance, morning rituals and evening rituals.

But evidence about cacao in the scientific literature is not automatically evidence about an 80Noir Ultra product.
