Strawberry Chia & Dark Chocolate Overnight Oats

Ingredients
The recipe makes three prepared jars, ready to lift from the fridge for breakfast across the next few mornings.
For the Strawberry Chia Jam
- 1 small punnet of strawberries, approximately 250g
- A small splash of water
- 30ml fresh orange juice
- 4 tbsp chia seeds
For the Three Overnight Oat Jars
- 9 tbsp gluten-free oats, approximately 90g
- 1 tbsp black cocoa powder
- 3 tbsp ground flaxseed
- 1½ tbsp coconut slivers
- 6 tbsp Greek yoghurt
- 1 small handful of currants, approximately 30g
- 45g mixed Brazil nuts, almonds and cashews, roughly chopped
- 50g 80Noir Ultra 87.5% dark chocolate, roughly chopped
- 250–300ml almond milk, or milk of choice
Method
Begin with the strawberry chia jam, then assemble the three jars and leave the oats to soften overnight.
- Remove the strawberry stalks and cut the fruit into small pieces.
- Add the strawberries to a saucepan with a small splash of water and 30ml orange juice.
- Cook gently until the strawberries soften and begin to break down, stirring occasionally.
- Lightly mash the cooked strawberries with the back of a spoon, leaving a little texture if desired.
- Remove the pan from the heat, stir in the 4 tablespoons of chia seeds and leave the mixture to thicken and cool.
- Divide the strawberry chia jam between three clean jars, creating a generous fruit layer at the base of each.
- In a mixing bowl, combine the gluten-free oats, black cocoa powder, flaxseed, coconut slivers, Greek yoghurt, currants, chopped nuts and pieces of 87.5% dark chocolate.
- Pour in the almond milk gradually and mix until everything is evenly combined. The mixture should be creamy and slightly looser than you want it to be the next morning.
- Divide the oat mixture evenly between the three jars, spooning it gently over the strawberry chia layer.
- Cover and refrigerate overnight, or for at least six hours.
- The next morning, stir or leave the layers visible. Add fresh berries, a small drizzle of maple syrup, extra yoghurt or chopped nuts before serving.
