Gingerbread Loaf Ingredients
- 250ml almond milk, slightly warmed
- 15ml white vinegar or lemon juice
- 70ml avocado oil or neutral oil
- 15ml molasses
- 80g sugar
- 80g light brown sugar
- 2 tsp vanilla extract
- 220g gluten free plain flour
- 1½ tsp baking powder
- 1½ tsp baking soda
- Pinch salt
- ½ tbsp chai spice or pumpkin spice with added ginger & cinnamon
Chocolate Marble Swirl
- 75g 100% or 87.5% dark chocolate
- 25g cocoa powder
- 60ml warm water
The dark chocolate swirl creates deep richness against the warming gingerbread sponge for a beautifully balanced loaf cake.
Bake The Loaf
- Preheat the oven to 175°C.
- Prepare a 9-inch loaf tin with greaseproof paper.
- In a bowl combine almond milk and vinegar, allowing it to curdle slightly.
- Add oil and molasses, whisking until fully combined.
- Add sugars and vanilla extract, whisking until dissolved.
- In a separate bowl combine flour, baking powder, bicarbonate of soda, spice mix and salt.
- Add dry ingredients into the wet mixture in three stages, whisking between additions.
- Melt the dark chocolate, then stir through cocoa powder and warm water until smooth.
- Pour 1/3 of the cake batter into the chocolate mixture and stir gently.
- Pour half the gingerbread batter into the tin, followed by the chocolate batter, then top with remaining gingerbread batter.
- Use an offset spatula or knife to create marble swirls.
- Bake for 40–50 minutes until firm on top and a skewer comes out clean.
- Cool in the loaf tin for 45 minutes before removing and allowing to cool fully.
