The New Dark Chocolate Bounty

A nostalgic treat made better richer, darker, and loaded with coconut love.

Let’s be honest, when the Dark Chocolate Bounty was discontinued in 2022, it left a coconut-shaped hole in many hearts. The milk chocolate version? I find it too sweet. So, I did what any dark chocolate devotee would do: made my own healthier, richer, more satisfying version from scratch. 🙌

These bounty bars are creamy, dreamy, and wrapped in 80Noir's deep dark chocolate. They’re also naturally gluten-free, dairy-free, and packed with good fats and fibre. Oh, and mini versions? Even better.

📝 Ingredients (Makes 10–12 full bars or 20+ mini bites)

  • 160g desiccated coconut

  • 100g full-fat coconut milk (solid part only)

  • 3 tbsp full-fat coconut milk (liquid part)

  • 4 tbsp maple syrup

  • ¼ tsp sea salt

  • 150g 80Noir Ultra dark chocolate, melted (use 87.5% or 100%)

📌 Tip: Chill your coconut milk in the fridge overnight, then scoop the solid part to measure separately from the liquid.


🍬 Method

  1. In a bowl, blend the coconut, coconut milk (both parts), maple syrup, and salt until the mixture becomes sticky and cohesive (it may still look slightly textured that’s okay!). I used gloves and did it by hand again as its fun! 

  2. Shape the mixture into bars with your hands or use a mini silicone mould (I used a financier tray for bite-size fun!).

  3. Freeze the bars for 1–2 hours until firm.

  4. Once solid, dip each bar in the melted dark chocolate until fully coated.

  5. Place back on a lined tray and refrigerate until the chocolate sets.

Storage:
Keep in an airtight container in the fridge (1 week) or freezer (up to 2 months). Perfect straight from the freezer on a warm day.
