Double Chocolate Cookie Dough
- ½ cup / 110g olive oil
- ¾ cup / 100g dark brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 2 cups / 100g superfine almond flour
- 100g gluten free plain flour
- ⅓ cup / 35g cocoa powder
- ½ tsp gluten free baking soda
- ½ tsp gluten free baking powder
- ½ tsp salt
- 1 cup / 160g 87.5% 80Noir Ultra Chocolate chopped
Heat. Line. Bake.
Preheat your oven to 350°F / 175°C.
Line a baking sheet with parchment paper or a silicone baking mat.
These only need around 8–10 minutes in the oven. The secret is taking them out while the centres are still soft and letting them finish setting on the tray.
Mix. Scoop.

Preheat the oven to 350°F / 175°C and line a baking sheet with parchment paper or a silicone mat.
Build The Base
Add the olive oil and dark brown sugar to a large mixing bowl. Beat until thoroughly combined and glossy.
Add Egg & Vanilla
Add the egg and mix until fully incorporated, followed by the vanilla extract.
Add The Dry Ingredients
Add the almond flour, gluten free plain flour, cocoa powder, baking soda, baking powder and salt. Mix only until everything comes together.
Add The Chocolate
Fold through the chocolate chips or chopped dark chocolate. You can bake immediately or chill the dough first for a firmer, thicker cookie.
Scoop
Scoop approximately 1½ tablespoons of dough per cookie onto the lined tray, leaving at least an inch between each one.
Bake
Bake for 8–10 minutes, until the edges are just beginning to feel firm but the centres still look soft.
Let Them Rest
Leave the cookies on the baking tray for at least 10 minutes. They will be delicate straight from the oven and will firm as they cool.
