When you want something that feels like a decadent chocolate truffle without switching on the oven, these chilled jujube energy bites are wonderfully simple. Dried jujubes create a naturally sweet, softly textured centre, while nuts, cacao and dark chocolate bring richness, depth and a satisfying finish.

Ingredients

A short list of whole ingredients comes together to create a dense, fudgy centre with a crisp dark chocolate finish.

For the Jujube Energy Bites

  • 150g dried jujube dates, pitted
  • 100g raw walnuts or almonds
  • 2 tbsp unsweetened cacao or cocoa powder
  • 2 tbsp creamy almond butter or peanut butter
  • A small pinch of flaky sea salt
Texture note: Finely processed dried jujubes retain a gentle, spongy chew that gives the centre a little natural texture beneath the smooth chocolate coating.

For the Dark Chocolate Coating

  • 100g 72% or 87.5% 80Noir Ultra dark chocolate
  • 1 tbsp coconut oil
  • A small pinch of flaky sea salt, for finishing
Chocolate choice: Use the 72% blend for a softer, rounder finish or 87.5% for deeper cacao intensity and less sweetness.

Method

Soften the jujubes if needed, blend the centre, roll into individual bites and finish with a smooth dark chocolate coating.

  1. If the dried jujubes feel particularly tough or dry, place them in a heatproof bowl and cover with boiling water. Leave to soften for 5 minutes.
  2. Drain the jujubes thoroughly and pat them dry with kitchen paper. Excess water can make the mixture too soft. 
  3. Add the pitted jujubes and raw walnuts or almonds to a food processor. Pulse until coarsely chopped. May have to wiggle them around. 
  4. Add the cacao powder, nut butter and a pinch of flaky sea salt.
  5. Process continuously for approximately 1–2 minutes, stopping to scrape down the sides when needed, until the mixture clumps together into a sticky, uniform dough.
  6. Take small portions of the mixture and pop them into a squares of a silicon mold or roll them into balls.
  7. Arrange the rolled energy bites on a parchment-lined plate or tray and chill for approximately 15 minutes while you prepare the chocolate.
  8. Place the dark chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly between each, until glossy and smooth.
  9. Pour the melted chocolate on top of the date mixture. Or pop the energy ball in. 
  10. Return each coated bite to the parchment-lined tray.
  11. Finish with a very small sprinkle of flaky sea salt while the chocolate is still wet.
  12. Place in the freezer for 20–30 minutes, or chill in the refrigerator for approximately 1 hour, until the chocolate coating is completely firm.
Alternative finish: Rather than coating each bite completely, drizzle the melted chocolate over the tops for a lighter, more rustic finish.
