Double Dark Chocolate Cookie Fries
The cookie jar just got considerably more interesting.
Somewhere between a cookie, a chocolate biscuit and something you absolutely should eat with your fingers. These crisp-edged, chocolate-studded cookie fries use two of our darkest chocolates: finely ground 100% through the dough and pieces of 87.5% folded through for pockets of proper dark chocolate.

Dark chocolate. But make it fun.
There are days for a beautifully made cup of dark hot chocolate, and there are days when chocolate should look suspiciously like a plate of French fries.
These are for the latter.
They have all the pleasure of a homemade chocolate cookie, but cutting the dough into slim little fries makes them crisp, snackable and extremely good for sharing, assuming you actually want to share them.
Double the chocolate.
Instead of relying on cocoa powder alone, this recipe uses finely ground 100% 80Noir Ultra chocolate through the dough and chopped 87.5% chocolate for deeper pockets of cacao.
Ingredients
- 115g unsalted butter, softened
- 90g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 140g plain flour
- 25g finely ground 80Noir Ultra 100% dark chocolate
- ½ tsp bicarbonate of soda
- ¼ tsp salt
- 100g 80Noir Ultra 87.5% dark chocolate, chopped into small pieces
Keep some of the chopped 87.5% chocolate slightly larger than the rest. Those irregular pieces create gorgeous little pockets of dark chocolate as the fries bake.
Method
- Start with the wet ingredients. Melt the butter, allow it to cool slightly, then mix with the light brown sugar until smooth. Add the egg and vanilla and mix until combined.
- Add the dry ingredients. Sift in the flour, finely ground 100% 80Noir Ultra chocolate, bicarbonate of soda and salt. Fold gently with a spatula until a soft chocolate dough forms.
- Add the second chocolate. Fold the chopped 87.5% 80Noir Ultra chocolate through the dough until evenly distributed.
- Roll. Place the dough onto a sheet of baking parchment and roll or press into a rectangle approximately 5mm thick.
- Make your fries. Use a sharp knife or pizza cutter to neaten the edges, then slice the dough into slim strips resembling French fries.
- Chill. Transfer the cut cookie fries to the freezer for 20–30 minutes. Meanwhile, preheat your oven to 180°C / 160°C fan.
- Bake. Arrange the chilled cookie fries on a lined baking tray with a little space between them. Bake for 8–10 minutes, until the edges are set.
- Now leave them alone. Let the cookie fries cool completely on the baking tray. They will continue to firm as they cool, giving you that lovely cookie-fries texture.
Because chocolate should taste like chocolate.
This is where these little cookies become very 80Noir Ultra. Rather than making something overwhelmingly sweet, we're building depth using two different cacao strengths.
Deep cacao through the dough.
Finely ground 100% chocolate gives the cookie base its dark, grown-up cacao character without adding sugar from the chocolate itself.
Little pockets of indulgence.
Chopped 87.5% chocolate brings texture and pockets of melting dark chocolate throughout the fries while keeping cacao firmly at the centre of the flavour.
A treat can still be thoughtful.
These are cookies and we're very happy about that. The difference is that the chocolate itself is doing much more of the flavour work.
Cocoa solids first.
Dark chocolate provides naturally occurring cocoa polyphenols alongside minerals including magnesium and iron.
Chocolate, not just sugar.
Using 100% and 87.5% dark chocolate creates a deeper, less sugary chocolate profile than recipes built around very sweet milk chocolate or confectionery chips.
Made to be enjoyed.
Homemade, portionable and easy to keep for the week. Make the batch on Sunday and you've got a proper chocolate treat ready when you want one.
The dunking possibilities are considerable.
Eat them exactly as they are, serve them alongside berries, or make the chocolate experience complete with a small 80Noir Ultra hot chocolate for dipping.
And yes, eating a cookie shaped like a French fry somehow makes it considerably more fun.
