  1. The Cacao Pod

Exterior:

  • Husk: The cacao pod is encased in a thick, leathery husk that varies in colour from yellow to purple depending on its ripeness and variety. The husk protects the valuable seeds inside.

Interior:

  • Pulp: Inside the pod, you’ll find a sweet, tangy white pulp that surrounds the cacao beans. This pulp is rich in sugars and is often used in fermentation processes.
  • Beans: Each pod contains 20-50 cacao beans. The beans are the primary component used to make chocolate. They are embedded in the pulp and are about the size of an almond.

 

 

  1. From Pod to Chocolate

The journey from cacao pod to chocolate involves several key stages:

Harvesting:

  • Ripe cacao pods are harvested by hand using machetes. The pods are then split open to reveal the beans and pulp.

Fermentation:

  • The beans, along with the surrounding pulp, are placed in shallow containers and covered to ferment for several days. This process is crucial for developing the beans' flavour. The pulp breaks down, and the beans darken and develop their chocolatey aroma.

Drying:

  • After fermentation, the beans are spread out to dry in the sun for about a week. This reduces their moisture content and further enhances their flavour.

 

Roasting:

  • The dried beans are roasted to bring out their rich, complex flavours. The roasting process also makes it easier to remove the outer shell of the bean.

Winnowing:

  • The roasted beans are cracked open, and the outer shells are removed, leaving behind the cacao nibs. These nibs are the purest form of cacao and can be eaten as is or processed further.

 

Grinding and Pressing:

  • The nibs are ground into a thick paste known as cacao liquor or cacao mass. This can be further processed into cacao butter and cacao powder. Cacao butter is the fat component, while cacao powder is the solid component.

Conching and Tempering:

  • The cacao mass is refined and mixed with other ingredients (such as sugar and milk for milk chocolate) to create a smooth texture. The mixture is then tempered to achieve the desired consistency and sheen.

Moulding and Cooling:

  • The tempered chocolate is poured into moulds, cooled, and solidified to form the final chocolate products.
