Fancy a treat, but don't like that groggy after feeling?
These beetroot brownies are for you! You wouldn't believe they are completely guilt free and one of your 5 a day.
. 500g of cooked beetroot
. 100g of unsalted butter (replace with olive oil for a vegan version)
. 200 grams of 80 Noir Ultra Beads
. 5ml of vanilla extract
. 200 grams of sugar of choice or 150 grams of stevia
. 3 eggs ( 2 mashed bananas for a vegan version )
. 100g of flour of choice ( I used rice flour )
. 25 grams of cocoa powder or cacao
1. First, melt the dark chocolate beads and butter, and then place in a blender with the beetroot. Blend on a high speed until completely smooth.
2. In a mixing bowl, combine all the dry ingredients and eggs.
3. Fold the beetroot mixture in. Once mixture is fully combined, place in a lined baking tin.
4. Place in the over for 15-20 minutes or until you can prod the centre with a fork and it comes out clean.
