Aunties Cookies

My aunt is one of the best cooks I know, and every time we visit, we are always in for a treat, always something tasty, filling and quite often, ingenious so she was exactly the right person to ask to come up with a beautiful tasty recipe with 80Noir Ultra chocolate. I present to you Aunties Cookies. The perfect snack for a break or just because you fancy it... Cheap, cheerful and great fun to bake.

Top Tip: Double the quantities and split it in half (that way you can alter the fillings - with chocolate and nuts of choice to one hand and then chocolate and ground ginger or mixed spice to the other half of the mixture).. The great thing about this recipe is that you can use whatever you have left in the cupboards and dont have to worry about quantities...


100 grams butter

150 grams caster sugar

5 ml vanilla essence

1 large egg beaten (2 tbpn of chia seeds with 6 tbpn of water and mix if you dont have any eggs)

Handful of nuts

100g of 80Noir Ultra

225 grams plain flour

1 teaspoon baking powder

Cocoa Powder to roll in (the mixture not you, unless you reare bored then go for it! Its not like we are going anywhere :)


  1. Put your oven on, for around 180 degree, next put parchment down on a tray ready for the cookies.

  2. Sift flour and baking powder together in a bowl

  3. Rub in butter - go on get your hands in there - or use a blender if you really have to, but more fun if done with hands or get your kids, fella, house mate involved and make it a team effort.

  4. Add the sugar and the rest of the other ingredients... chocolate etc

  5. Add egg and maybe a little milk to mix to become a firm mixture.

  6. Make into a sausage ... roll in cocoa powder , wrap in tinfoil and leave in fridge for 30 mins to firm up ...

  7. or freeze to use another time .

  8. Cut into slices and bake in hot oven 1O mins .

  9. Because you have rolled them in coca powder they have chocolate edges

  10. Great for days out WHENEVER THAT MAYBE

and in the words of my fabulous Aunt - if you buy a cookie at a museum cafe they are approx £2.25 each ... slipped out of handbag 👜 and popped in saucer FREE
